Quick Chicken / Lamb / Shrimp / Vegetable Biryani
Serves 6
Brown, 1lb. of cubed, skinless, boneless, chicken thighs or cubed lamb in ½ jar of BOMBAY BRAND BIRYANI PASTE, 1 medium onion finely chopped, 1 medium tomato finely chopped. Add 1/2 cup water and cook on low until chicken/lamb/shrimp is cooked and all water is absorbed. Cook basmati rice per package directions. Fold cooked chicken/lamb/shrimp gently into cooked rice. Soak pinch of saffron in 4 tbsp hot water and sprinkle liquid over the rice. Garnish with chopped parsley, sauteed onion rings and lemon wedges. Serve with yogurt and an assortment of BOMBAY BRAND PICKLES. Substitute one 1Ooz package frozen vegetables, w/4 oz. cubed firm tofu for meat, for vegetarian biryani and add only 1/4 cup water.
