Bombay Tofu Patties
Serves 6
Assemble the following ingredients in a large bowl:
1 container extra-firm tofu (drained and mashed well). 2 green onions (white & green part) finely chopped. 1/2 cup of finely chopped cilantro leaves with stems, 1 Anaheim chili (or 1/2 green bell pepper) seeded and finely chopped, 1 egg beaten (optional), 1/2 cup panko crumbs or bread crumbs, 1 medium sweet potato boiled and mashed, 1 tsp Bombay Brand Ginger & Garlic Paste, 1/2 tsp paprika, salt to taste, 1 tbsp Bombay Brand Curry Powder.
Mix above ingredients well by hand and form into 1" balls, slightly flattened into small patties. You may add more panko or breadcrumbs to handle the mixture easily.
Heat 1/4 cup coconut or olive oil in a medium, shallow pan over medium/high heat. Once the oil is hot place the patties into the pan one at a time. When golden-brown on one side, flip the patties over and do the other side.
Remove with a slotted spatula onto paper towels before placing on serving platter. Serve as an appetizer with either Bombay Brand Hot Bengal Chutney or Bombay Brand Mango Lime Chutney.
